Raisin-Nut Pie

3 Eggs
3/4 Cup Corn Syrup
1/2 Cup Light Brown Sugar
1/4 Cup Melted Margarine
1 Teaspoon Vanilla
1/4 Teaspoon Salt
1 Cup Raisins
1/2 Cup Chopped Pecans (or Walnuts)
9 or 10 Inch Pie Shell

Beat eggs. Add corn syrup, sugar, margarine, vanilla and salt. Stir in raisins and nuts. Pour into pie shell and bake at 350* for about 40 minutes.


Sweet Potato Pie

2 Cups Mashed, Cooked Sweet Potatoes
4 Tablespoons Margarine
3/4 Cup Sugar
2 Eggs
1 Teaspoon Allspice
1 Teaspoon Nutmeg
1 Unbaked Pie Shell
Ribbon Cane Syrup (Optional)

Put the mashed sweet potatoes in a mixing bowl, add in the margarine, sugar and eggs. Beat well, add spices. Pour into unbaked pie shell. Drizzle top with ribbon cane syrup (optional). Bake at 400* until done (eyeball it) figure as you would for a Pumpkin Pie. This is spicy ~ to make less spicy reduce the measurements for the allspice & nutmeg
by half.

  1. Delicious looking pies Teresa! I am quite partial to raisins and nuts so would probably go for that one first!
